When tacking it pays to take your time, watch the waves, and wait
for a smooth patch of sea which coincides with a lull in the wind.
The boat should be put about just after you come through a crest,
when you have full speed on (just used for punching through the
wave crest). Put the helm over just as you pass through the crest
(boat on far right).
